How long have you been in business?
Since December 2021, Little Sparrow has been bringing Spaetzle to the people of Honolulu, serving restaurant quality food at a variety of farmers markets.

How’d you get started and what sparked the idea for your business?
We have both loved farmers markets as long as we can remember, then Halley had the opportunity to work at Youpo Noodles, and fell in love with working with them. We have both been making Spaetzle for about 12 years each, running it on specials at restaurants we’ve been at. After the upheaval of the industry during the pandemic, we decided that we wanted to work together and for ourselves. All of this combined is how we came to build Little Sparrow.

What do you wish you had known before you started your business?
How amazing and fun it is. We wish we had started sooner!

What are you most proud of about your business?
Seeing people’s faces when they are genuinely enjoying our food and drinks.

What do you love most about being a food entrepreneur?
The freedom to cook what we want, using high quality ingredients to create a product that we stand behind.

What’s one piece of advice you have for other food entrepreneurs?
Don’t be scared to do your own thing. If you have a concept that you believe in, go for it. Only buy the equipment that you need, as you need it.

What makes your business unique/special?
It’s not very often that you come across Spaetzle here on Oahu. While it’s most often served as a side dish, we bring it front and center by creating a meal out of it.

What’s your best seller at the moment?
That can change from market to market, but it’s generally the CBM and whatever we are running as a special that day selling neck and neck.

What's next for you and business?
We are hoping to find a way to sell our Spaetzle wholesale in local grocery stores, so people can enjoy it however and whenever they want.
